This is one of my quick and easy go to lunches or side dishes. I love it served warm, but it can be easily served cool on a hot day. Soba is a special Japanese buckwheat noodle that is incredibly earthy and nourishing. It pairs beautifully with the savory sesame for a balanced and accessible protein source.
- 9 oz. Soba Noodles
- 3 Scallions thinly sliced
- 2 T Sesame Seeds
- 3 T Sesame Oil
- 3 T Tahini
- 3 T Tamari Soy Sauce
- 1/3 cup (approximately) of the warm noodle water
- Garnish with Lime and Steamed Veggies
**Serves 2 - 4 people
Cook the Soba noodles according to manufacturers instructions. Drain. Rinse with water to remove excess starch and toss with sesame oil to coat.
Combine the remaining ingredients in a serving bowl and stir to combine.
Gently toss the noodles in the sesame dressing.
Garnish with a bit of lime and steamed veggies if desired.
Note: If you have leftovers, the noodles may absorb the dressing making them stick together! To remedy, simply add to warm water to rehydrate to desired consistency and enjoy.
