This is one of my quick and easy go to lunches or side dishes. I love it served warm, but it can be easily served cool on a hot day. Soba is a special Japanese buckwheat noodle that is incredibly earthy and nourishing. It pairs beautifully with the savory sesame for a balanced and accessible protein source.


  • 9 oz. Soba Noodles
  • 3 Scallions thinly sliced
  • 2 T Sesame Seeds
  • 3 T Sesame Oil
  • 3 T Tahini
  • 3 T Tamari Soy Sauce
  • 1/3 cup (approximately) of the warm noodle water
  • Garnish with Lime and Steamed Veggies

**Serves 2 - 4 people


  1. Cook the Soba noodles according to manufacturers instructions. Drain. Rinse with water to remove excess starch and toss with sesame oil to coat.

  2. Combine the remaining ingredients in a serving bowl and stir to combine.

  3. Gently toss the noodles in the sesame dressing.

  4. Garnish with a bit of lime and steamed veggies if desired.

Note:  If you have leftovers, the noodles may absorb the dressing making them stick together! To remedy, simply add to warm water to rehydrate to desired consistency and enjoy.
