Black Lentil, Olive and Mache Salad

Lentils can be incredibly detoxifying to the blood.  Combine with the clearing properties of the Mache, and this salad is a definite yes for this Earthy season we are entering. Serve warm to ease digestion.


Ingredients

  • 1 cup cooked black lentils (warm)
  • 1/3 cup chopped green olives
  • ¼ cup olive oil
  • 1 Tablespoon whole grain mustard
  • 1 Tablespoon fresh oregano
  • Juice of one lemon
  • 4 cups Mache or Lamb’s Lettuce
  • Salt and pepper to taste

**Makes 2 servings


Directions

  1. Cook lentils according to instructions. They should be tender but not overdone.
  2. In the meantime combine olive oil, mustard, lemon, oregano and olives.
  3. Toss the lentils on this dressing.
  4. Serve over mache.

Fresh Jersey Tomato and Avocado Salad

We all know Jersey tomatoes are fresh and delicious this time of year. I love serving this simple salad with cooked quinoa and beans as a light summer supper.


Ingredients 

  • 2 avocados - 1 inch dice
  • 4-5 fresh roma tomatoes - 1 inch dice
  • Juice of 1-2 lemons
  • 1 T extra virgin olive oil
  • Salt and pepper to taste

Serves 2


Directions

  1. Simply combine ingredients to taste
