Roasted Nectarines with Almond Ricotta and Honey

This beautiful summer dish is perfectly fragrant and nourishing. Wonderful way to take advantage of these seasonal fruits blossoming this time of year.


  • 4 Nectarines (halved, pits removed)
  • Kite Hill Almond Ricotta
  • Blackberries
  • Honey
  • 1 T coconut oil

*Serves 4


  1. Halve and remove pits from the nectarines.

  2. Place cut side up in a baking dish greased with coconut oil. Drizzle remaining coconut oil over cut sides of nectarines.

  3. Bake in the oven at 350 degrees for 20-30 minutes. Baste with juices halfway through cooking time.

  4. When they are done, remove from oven. Allow to cool slightly and move to serving plates.

  5. Garnish each with a dollop of the Almond Ricotta, blackberries and drizzle with honey to taste.

  6. Enjoy!
