We all know Jersey tomatoes are fresh and delicious this time of year. I love serving this simple salad with cooked quinoa and beans as a light summer supper.
- 2 avocados - 1 inch dice
- 4-5 fresh roma tomatoes - 1 inch dice
- Juice of 1-2 lemons
- 1 T extra virgin olive oil
- Salt and pepper to taste
- Simply combine ingredients to taste
