This beautiful summer dish is perfectly fragrant and nourishing. Wonderful way to take advantage of these seasonal fruits blossoming this time of year.
- 4 Nectarines (halved, pits removed)
- Kite Hill Almond Ricotta
- 1 T coconut oil
Halve and remove pits from the nectarines.
Place cut side up in a baking dish greased with coconut oil. Drizzle remaining coconut oil over cut sides of nectarines.
Bake in the oven at 350 degrees for 20-30 minutes. Baste with juices halfway through cooking time.
When they are done, remove from oven. Allow to cool slightly and move to serving plates.
Garnish each with a dollop of the Almond Ricotta, blackberries and drizzle with honey to taste.
