We all know Jersey tomatoes are fresh and delicious this time of year. I love serving this simple salad with cooked quinoa and beans as a light summer supper.


Ingredients 

  • 2 avocados - 1 inch dice
  • 4-5 fresh roma tomatoes - 1 inch dice
  • Juice of 1-2 lemons
  • 1 T extra virgin olive oil
  • Salt and pepper to taste

Serves 2
