Warm Cacao for the Body + Soul

We all love chocolate, the mysticism and the divine that comes with imbibing this warm elixir. But we don’t love all the empty sugar that accompanies so many hot chocolates. This recipe incorporates dense nutrition (not low-cal) of good fats, iron and minerals to feed the body and soul.


For each person served:

  • 1 T raw cacao powder
  • 1 T coconut oil
  • 1 T blackstrap molasses
  • 1 ½ c. coconut milk
  • A dash of vanilla
  • A dash of cardamom and / or cinnamon

Instructions

  1. Combine ingredients in a saucepan.
  2. Over medium-low heat bring to a simmer until small bubbles form around the edge.
  3. With your immersion blender, blend for one minute or until combined and frothy.
  4. Pour into your mug and Enjoy!

Vanilla Pomegranate Poached Pears

This is a delicious treat equally good for a light breakfast or dessert. High in antioxidants and prebiotic fiber, this dish supports the digestive system.  Pears are also highly nourishing to the Yin of the Lungs in Chinese medicine, making this the perfect time of year to incorporate this nutritional powerhouse into your daily menu.


Ingredients 

  • 4 ripe pears, halved and cored (peeling optional)
  • 1 - 1 ½ cups water
  • ½ cup pomegranate juice
  • 1 vanilla bean split
  • 1 cinnamon stick (optional)

Serves 4.


Directions

  1. Combine the water, juice, vanilla and cinnamon in a 2 quart saucepan. Make sure there is enough liquid to cover the pears
  2. Bring to a simmer and add the pears.
  3. Poach for approximately 15 minutes until tender. Remove to a storage container and cool..
  4. Bring the poaching liquid to a boil and reduce until there is about ¾ -1 cup of liquid remaining and it has thickened.
  5. Soak the pears in the poaching liquid overnight.
  6. Reheat to serve.
