Zucchini are prolific this time of year. This simple vegetable is easy to prepare and absolutely delicious. I love this dish as an easy side or warm on top of a summer vegetable salad.


  • 2 medium zucchini - ½ in dice
  • 1 T organic butter
  • Juice of 1 lemon
  • 1 t fresh thyme
  • Salt and pepper to taste

**Makes 2 Servings


In a medium saute pan, warm the butter over medium heat.

  1. Add in the diced zucchini. Season with salt and pepper.

  2. Cook until tender and brown, about 10 minutes over medium-low heat.

  3. Remove from heat and add lemon and thyme.

  4. Serve as desired.

Leftovers also make a wonderful omelette filling the next day!
