Zucchini are prolific this time of year. This simple vegetable is easy to prepare and absolutely delicious. I love this dish as an easy side or warm on top of a summer vegetable salad.
- 2 medium zucchini - ½ in dice
- 1 T organic butter
- Juice of 1 lemon
- 1 t fresh thyme
- Salt and pepper to taste
**Makes 2 Servings
In a medium saute pan, warm the butter over medium heat.
Add in the diced zucchini. Season with salt and pepper.
Cook until tender and brown, about 10 minutes over medium-low heat.
Remove from heat and add lemon and thyme.
Serve as desired.
Leftovers also make a wonderful omelette filling the next day!
